CHABLIS- BURGUNDY


After we left Beaune we headed straight north which took about a 4 hours drive.  We we're onto our next destination to spend 2 nights in Reims in Champagne so on our way we stopped for a few hours in the pretty little wine town of Chablis and it is a very small village. We didn't have much time there we only spent about 3 hours there as when we got there everything closed at 1 Pm and  and we didn't know that so we didn't get to do any wine tastings which was a disappointment for us so we just wandered the streets and had a great lunch and I enjoyed a glass of what else, a great glass of Chablis.  This town is known for top class white Burgundy, they are the best Chardonnays in the world, hands down.

If you don't like big oaky Chardonnay like me then maybe Chablis is the ticket. This region in the northern reaches of Burgundy, makes the most minerally, crisp and lean Chardonnays on the market.  I fell in love with Chardonnays all over again.  If you go big and buy the Grand Cru wines then make sure you cellar them for at least 5 years before opening them.  Great Chablis can cellar 1-2 decades, or more.
